Delightful soft and chewy Easter cookies, perfect for celebrating spring with family and friends.

  • Total Time: 27 minutes
  • Yield: 24 cookies

Ingredients

  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 1 tsp salt
  • ½ cup colorful sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the butter and sugars together until light and fluffy. Add in the eggs one at a time and stir in vanilla extract.
  3. Combine flour, baking powder, and salt in another bowl.
  4. Mix the dry ingredients into the wet ones until well combined. Fold in colorful sprinkles.
  5. Scoop the dough onto a parchment-lined baking sheet, spacing them apart.
  6. Bake for 10-12 minutes or until edges are golden and centers are soft.
  7. Cool on tray for a few minutes before transferring to a wire rack.
  8. Decorate with icing and extra sprinkles if desired.

Notes

For softer cookies, slightly underbake them. Chilling the dough for 30 minutes also helps maintain their shape.
