Ingredients
- 1 lb Boneless chicken (breast or thighs)
- 1 cup Favorite melting cheese (mozzarella, cheddar, or pepper jack)
- 4 Flour tortillas (or corn tortillas or lettuce wraps)
- 1 cup Bell peppers, chopped
- ½ cup Onions, chopped
- 1 cup Fresh spinach
- 1 tsp Garlic powder
- 1 tsp Cumin
- 1 tsp Chili powder
- Sour cream, salsa, or guacamole, for serving
Instructions
- Prep the chicken: Season the chicken with salt, pepper, garlic powder, and cumin.
- Cook the chicken: In a skillet, heat olive oil over medium heat and cook the chicken until golden brown, about 7-10 minutes.
- Add veggies: Toss in chopped vegetables and cook until tender, about 3-4 minutes.
- Melt the cheese: Lower the heat, sprinkle cheese over the chicken and veggies, add a splash of water, cover until cheese melts, about 2-3 minutes.
- Assemble the wraps: Spoon the filling into tortillas, fold sides in, and roll tightly.
- Final touch: Toast the wraps seam-side down in the skillet until crispy and golden.
- Serve: Slice in half and serve with sour cream, salsa, or guacamole.
Notes
Feel free to customize wraps with different veggies or cheese. These wraps can be made in advance and stored in the fridge.
