Ingredients

  • 1 cup fresh grated carrots
  • 2 cups all-purpose flour

  • 1/2 cup granulated sugar

  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 cup cream cheese (for frosting)
  • 2 cups powdered sugar (for frosting)
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add in the egg and mix well.
  4. Stir in the grated carrots.
  5. Whisk together the flour, baking soda, baking powder, cinnamon, and nutmeg in another bowl.
  6. Incorporate the dry ingredients into the wet mixture until just combined.
  7. Fold in the chopped walnuts or pecans if using.
  8. Scoop the dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
  9. Bake for 12-15 minutes or until the edges are lightly golden.
  10. Cool on the baking sheet for a few minutes before transferring to a wire rack.
  11. Prepare the frosting by beating the cream cheese and powdered sugar until smooth.
  12. Frost each cooled cookie generously and serve.
