- 1 cup fresh grated carrots

Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add in the egg and mix well.
- Stir in the grated carrots.
- Whisk together the flour, baking soda, baking powder, cinnamon, and nutmeg in another bowl.
- Incorporate the dry ingredients into the wet mixture until just combined.
- Fold in the chopped walnuts or pecans if using.
- Scoop the dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
- Prepare the frosting by beating the cream cheese and powdered sugar until smooth.
- Frost each cooled cookie generously and serve.
Notes
