- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- 1 cup granulated sugar
- ½ cup brown sugar
- ½ cup vegetable oil
- 3 eggs
- 1 teaspoon vanilla extract
- 2 cups grated carrots
- Optional: chopped walnuts or pecans
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×13-inch baking dish or line it with parchment paper.
- Whisk together flour, baking powder, baking soda, cinnamon, and nutmeg in a medium bowl.
- Beat together granulated sugar, brown sugar, and vegetable oil in a large bowl. Add eggs and vanilla, whisking until smooth.
- Mix in the dry ingredients gently until just combined. Fold in grated carrots.
- Pour the mixture into the prepared baking dish and smooth it out.
- Bake for 25–30 minutes or until a toothpick comes out clean.
- Cool completely in the dish on a wire rack.
- Prepare frosting by mixing cream cheese, softened butter, powdered sugar, and vanilla until smooth. Spread over cooled bars.
- Cut into squares and serve.
Notes
You can substitute whole wheat or gluten-free flour as needed. Ensure carrots are finely grated for the best texture.
