Ingredients

  • 2 cups all-purpose flour

  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon

  • 1 cup granulated sugar
  • ½ cup brown sugar
  • ½ cup vegetable oil
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 2 cups grated carrots
  • Optional: chopped walnuts or pecans

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13-inch baking dish or line it with parchment paper.
  3. Whisk together flour, baking powder, baking soda, cinnamon, and nutmeg in a medium bowl.
  4. Beat together granulated sugar, brown sugar, and vegetable oil in a large bowl. Add eggs and vanilla, whisking until smooth.
  5. Mix in the dry ingredients gently until just combined. Fold in grated carrots.
  6. Pour the mixture into the prepared baking dish and smooth it out.
  7. Bake for 25–30 minutes or until a toothpick comes out clean.
  8. Cool completely in the dish on a wire rack.
  9. Prepare frosting by mixing cream cheese, softened butter, powdered sugar, and vanilla until smooth. Spread over cooled bars.
  10. Cut into squares and serve.

Notes
