- 1 pound steak tips (sirloin or filet mignon)
- 8 ounces rigatoni
- 1 cup cheddar cheese, shredded
- 1 cup Parmesan cheese, freshly grated
- 1 cup heavy cream
- 2 tablespoons Cajun seasoning

- 2 cloves garlic, minced
- 1 cup mushrooms, sliced

- Pasta water, reserved
Instructions
- Prepare the steak: Season the steak tips generously with Cajun seasoning. In a large skillet, heat olive oil over medium-high heat. Sear the steak for about 3-4 minutes on each side until cooked to your liking. Remove from the skillet and let it rest.
- Cook the pasta: Boil a large pot of salted water and add the rigatoni. Cook according to package instructions until al dente. Reserve a cup of pasta water, then drain.
- Make the sauce: In the same skillet, add more olive oil if needed and sauté minced garlic and sliced mushrooms until golden. Pour in the heavy cream, let it simmer, and stir in the cheddar and Parmesan until melted. Adjust the consistency with reserved pasta water as needed.
- Combine everything: Toss the cooked rigatoni into the sauce, ensuring it’s coated, then add the steak tips back into the skillet. Mix gently to meld flavors.
- Serve: Plate your dish, garnishing with extra Parmesan and cracked black pepper.
