- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 1/2 cups heavy cream, whipped
- 1/2 cup fresh mint leaves, finely chopped
- 1 cup graham cracker crumbs
- 1 tsp almond extract
- 1/2 cup mint chocolate chips (optional)
Instructions
- Begin by preparing the mint cream filling. In a mixing bowl, blend the softened cream cheese and powdered sugar until smooth and creamy.
- Gently fold in the whipped heavy cream, careful not to deflate it.
- Finely chop your fresh mint leaves and gently mix them into the cream filling.
- In a rectangular dish, start layering your components. Begin with a layer of graham cracker crumbs and follow with a layer of the mint cream filling.
- Repeat these layers until you finish with the cream.
- For the grand finish, garnish the top with chopped mint or additional mint chocolate chips.
- Cover and chill in the refrigerator for at least 240 minutes, or overnight if possible.
