Instructions
- Begin by preparing the meatballs. In a large bowl, combine your ground meat, breadcrumbs, egg, garlic, herbs, salt, and pepper. Mix everything gently with your hands, being careful not to overwork the meat.
- Roll the mixture into bite-sized meatballs, about one inch in diameter. Set them aside on a tray.
- In a large pot over medium heat, drizzle olive oil. Sauté diced onions and minced garlic until they soften and become translucent—this usually takes around five minutes.
- Add your chosen vegetables and sauté for another few minutes until they begin to soften.
- Pour in your broth and bring it to a gentle boil. Carefully drop the meatballs into the simmering broth, allowing them to cook for at least 15-20 minutes.
- Taste the broth and adjust the seasonings as needed.
- Add fresh herbs at the end, stirring gently.
