- For Glaze: 1 cup powdered sugar, 2-3 tbsp lemon juice
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare a 9×5-inch loaf pan by greasing and flouring or lining with parchment paper.
- Mix the flour, baking powder, baking soda, and salt in a bowl and set aside.
- Cream the butter and sugar together until light and fluffy, about 3-5 minutes.
- Add the eggs one at a time, mixing well after each addition, then add lemon zest and vanilla extract.
- Combine the dry ingredients with the wet mixture, alternating with lemon juice, until just mixed.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Cool the cake for 10 minutes in the pan before transferring it to a wire rack.
- Make the glaze and drizzle it over the cooled cake before serving.
