  • Total Time: 75 minutes
  • Yield: 8 servings

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • For Glaze: 1 cup powdered sugar, 2-3 tbsp lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×5-inch loaf pan by greasing and flouring or lining with parchment paper.
  3. Mix the flour, baking powder, baking soda, and salt in a bowl and set aside.
  4. Cream the butter and sugar together until light and fluffy, about 3-5 minutes.
  5. Add the eggs one at a time, mixing well after each addition, then add lemon zest and vanilla extract.
  6. Combine the dry ingredients with the wet mixture, alternating with lemon juice, until just mixed.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Cool the cake for 10 minutes in the pan before transferring it to a wire rack.
  10. Make the glaze and drizzle it over the cooled cake before serving.

Notes

Ensure to measure flour correctly to avoid a dense cake. Use fresh lemons for the best flavor.
