- 1 and ½ cups graham cracker crumbs
- ⅓ cup sugar
- ½ cup melted butter
- 1 cup sweetened condensed milk
- ½ cup sour cream
- ¾ cup freshly squeezed key lime juice
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the crust: In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until crumbly. Press this mixture into the bottom of a greased 9×9 inch baking dish.
- Bake the crust for about 8-10 minutes until lightly golden. Remove and cool slightly.
- Make the filling: In a medium bowl, combine sweetened condensed milk, sour cream, and key lime juice. Add vanilla extract and whisk until smooth.
- Pour the filling over the cooled crust and bake for an additional 15-20 minutes. The edges should be set while the center remains slightly jiggly.
- Cool completely; let it cool at room temperature for about an hour, then refrigerate for at least 2 hours to fully set.
- Cut into bars and serve chilled, optionally garnished with lime zest or whipped cream.

Use fresh key limes for the best flavor. Ensure the filling is smooth without lumps for a creamy texture.
