A comforting Hungarian dish featuring chicken in a rich, creamy paprika sauce, perfect for family gatherings.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

  • Chicken (breast or thighs, skin-on, bone-in preferred)
  • Paprika (sweet or smoked)
  • Onion (sweet yellow, finely chopped)
  • Garlic (fresh, minced)
  • Tomato Paste
  • Chicken Broth (homemade or low-sodium)
  • Sour Cream
  • Fresh parsley (for garnish)

Instructions

  1. Sauté the aromatics: Start by heating a tablespoon of oil in a large skillet over medium heat. Add finely chopped onions and cook until they’re soft and golden brown. Stir in minced garlic.
  2. Brown the chicken: Increase the heat to medium-high. Season the chicken with salt and pepper, then add it to the skillet. Brown each side for about 5-7 minutes.
  3. Stir in paprika and tomato paste: Remove the chicken briefly and stir in the paprika and tomato paste, cooking until fragrant.
  4. Add broth and simmer: Return the chicken to the pan, pour in the chicken broth, cover, and cook for about 25-30 minutes.
  5. Finish with sour cream: Stir in sour cream and let it simmer for a few more minutes to meld the flavors.
  6. Serve hot over noodles, rice, or bread, garnished with parsley.

Notes

Taste at various stages to adjust seasoning and consider a splash of white wine for depth.
