  • 2 medium Sweet Potatoes, peeled and chopped
  • 1 cup Rolled Oats
  • 1/2 cup Unsweetened Peanut Butter
  • 2 large Eggs

  • 1 teaspoon Baking Powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the sweet potatoes in boiling water until soft, about 15-20 minutes; drain and mash.
  3. Mix the mashed sweet potatoes, oats, peanut butter, and eggs in a large bowl until well combined.
  4. Add baking powder and vegetable oil; mix until evenly combined.
  5. Prepare a 9-inch round cake pan by greasing or lining it with parchment paper.
