- 2 medium Sweet Potatoes, peeled and chopped
- 1 cup Rolled Oats
- 1/2 cup Unsweetened Peanut Butter
- 2 large Eggs
- 1/4 cup Vegetable Oil
- 1 teaspoon Baking Powder
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the sweet potatoes in boiling water until soft, about 15-20 minutes; drain and mash.
- Mix the mashed sweet potatoes, oats, peanut butter, and eggs in a large bowl until well combined.
- Add baking powder and vegetable oil; mix until evenly combined.
- Prepare a 9-inch round cake pan by greasing or lining it with parchment paper.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
- Decorate with a thin layer of peanut butter or serve plain, cut into slices or treat-sized bites.
