Delicious and fudgy small batch brownies perfect for satisfying a sweet tooth without excess.

Ingredients

  • ½ cup unsalted butter (or coconut oil)
  • 1 cup granulated sugar (or brown sugar)
  • 2 large eggs (or 1 flax egg)
  • 1 teaspoon vanilla extract (or almond extract)
  • ⅓ cup unsweetened cocoa powder (or dark cocoa powder)
  • ½ cup all-purpose flour (or almond flour for gluten-free)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a small baking dish (8×8 inches works great).
  2. Melt ½ cup of unsalted butter over a pot of simmering water or in the microwave.
  3. Stir in 1 cup of granulated sugar until well combined.
  4. Add 2 large eggs, one at a time, stirring vigorously after each addition.
  5. Mix in 1 teaspoon of vanilla extract.
  6. Sift in ⅓ cup of unsweetened cocoa powder and ½ cup of all-purpose flour; fold gently until just combined.
  7. Pour your batter into the greased pan, spreading it evenly.
  8. Bake for 20-25 minutes or until a toothpick inserted comes out with a few moist crumbs. Let them cool before cutting into squares.

Notes

Avoid overmixing the batter and be mindful of baking time to keep brownies soft.
