Ingredients
- 2 boneless, skinless chicken thighs
- 2 cups cherry tomatoes, halved
- 1/2 cup fresh basil, torn
- 3 cloves garlic, minced
- 1/2 onion, finely chopped
- 2 tablespoons olive oil
- 1 tablespoon butter
- Salt and pepper, to taste
- Optional: 1/4 cup white wine
Instructions
- Prep your ingredients: Wash the cherry tomatoes and slice them in half. Mince the garlic and chop your onion.
- Sear the chicken: Heat olive oil and butter over medium heat. Season the chicken with salt and pepper, and sear for 4-5 minutes on each side until golden brown. Remove and set aside.
- Sauté the aromatics: In the same skillet, add onions and cook until softened, then add minced garlic for about a minute.
- Add the tomatoes: Incorporate the halved cherry tomatoes and sauté until they start to burst (about 4-5 minutes).
- Combine and simmer: Return the chicken to the skillet and add white wine if using. Let it simmer for another 3-4 minutes.
- Add fresh basil: Tear fresh basil leaves and sprinkle them over the chicken and tomatoes before serving.
- Serve and enjoy: Plate the dish and serve with crusty bread or rice.
Notes
Serve with a side salad or over pasta for a complete meal. Use dried basil in a pinch.
