Ingredients
- 1 lb boneless chicken thighs
- 1 lb fresh green beans
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp dried thyme (or fresh)
- 1 tsp dried rosemary (or fresh)
- 1 lemon, halved
- Salt and pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Toss chicken thighs with olive oil, minced garlic, salt, pepper, and herbs until evenly coated.
- Arrange the chicken on one side of a large baking sheet and place the green beans on the other side; drizzle with olive oil and season.
- Add the lemon halves cut side down to the pan.
- Roast for 25-30 minutes until chicken is cooked through and green beans are tender.
- Serve with a squeeze of roasted lemon juice over the dish.
- Enjoy with buttery rolls or a simple salad!
Notes
Don’t overcrowd the pan for best results. Consider using parchment paper for easy cleanup.
