Ingredients
- 1 lb chicken (breast or thighs), boneless
- 1 lb gnocchi (store-bought or homemade)
- 8 oz cremini or button mushrooms, sliced
- 1 lemon, zested and juiced
- 4 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh thyme, chopped
- 2 cups chicken broth
- 2 tbsp olive oil or butter
- Salt and pepper, to taste
Instructions
- Prep the ingredients: Slice the chicken into strips and chop the mushrooms. Zest and juice the lemon, and set aside the herbs.
- Cook the chicken: Heat olive oil in a large skillet over medium heat, then add the chicken strips. Cook until browned and cooked through, about 5-7 minutes. Season with salt and pepper, then remove from pan.
- Sauté the vegetables: In the same skillet, add mushrooms and garlic, cooking until mushrooms are golden, about 5 minutes.
- Add the broth and gnocchi: Pour in the chicken broth and bring to a simmer, then add gnocchi. Cook for 2-3 minutes or until they float.
- Combine and finish: Return the chicken to the pan, add lemon juice and herbs, and mix gently to heat through for another 2-3 minutes.
- Serve and enjoy: Serve hot, garnished with herbs and optional Parmesan.
Notes
For a vegetarian option, replace chicken with tofu. Feel free to experiment with seasonal vegetables.
