A delightful one-pan meal that combines tender chicken, pillowy gnocchi, and vibrant lemon for a comforting family dinner.

  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

  • 1 lb chicken (breast or thighs), boneless
  • 1 lb gnocchi (store-bought or homemade)
  • 8 oz cremini or button mushrooms, sliced
  • 1 lemon, zested and juiced
  • 4 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh thyme, chopped
  • 2 cups chicken broth
  • 2 tbsp olive oil or butter
  • Salt and pepper, to taste

Instructions

  1. Prep the ingredients: Slice the chicken into strips and chop the mushrooms. Zest and juice the lemon, and set aside the herbs.
  2. Cook the chicken: Heat olive oil in a large skillet over medium heat, then add the chicken strips. Cook until browned and cooked through, about 5-7 minutes. Season with salt and pepper, then remove from pan.
  3. Sauté the vegetables: In the same skillet, add mushrooms and garlic, cooking until mushrooms are golden, about 5 minutes.
  4. Add the broth and gnocchi: Pour in the chicken broth and bring to a simmer, then add gnocchi. Cook for 2-3 minutes or until they float.
  5. Combine and finish: Return the chicken to the pan, add lemon juice and herbs, and mix gently to heat through for another 2-3 minutes.
  6. Serve and enjoy: Serve hot, garnished with herbs and optional Parmesan.

Notes

For a vegetarian option, replace chicken with tofu. Feel free to experiment with seasonal vegetables.
