Ingredients
- 1 ½ cups crushed graham crackers
- ½ cup melted butter
- 1 cup cream cheese, softened
- ½ cup powdered sugar
- 1 cup whipped cream (store-bought or homemade)
- 1 cup melting chocolate (semi-sweet or dark)
- 1 cup sliced strawberries
- Chocolate shavings for garnish (optional)
Instructions
- Prepare the crust: In a medium bowl, combine the crushed graham crackers with the melted butter. Mix until the crumbs are well-coated. Press this mixture firmly into the bottom of a 9-inch springform pan. Chill in the refrigerator for about 15 minutes.
- Make the filling: In another bowl, beat the softened cream cheese and powdered sugar until smooth. Carefully fold in the whipped cream.
- Melt the chocolate: In a microwave-safe bowl, melt the chocolate in increments of 30 seconds, stirring in between, until fully smooth. Allow it to cool slightly before folding it gently into the cream cheese mixture.
- Layering: Once well mixed, pour half of the chocolate mixture onto the chilled crust, smoothing it into an even layer. Add a layer of sliced strawberries, then top with the remaining chocolate mixture.
- Chill: Cover the cheesecake with plastic wrap and let it chill in the fridge for at least 240 minutes, or overnight if possible.
- Serve: Once set, carefully release the cheesecake from the springform pan. Garnish with chocolate shavings and additional strawberries for presentation. Cut into pieces and enjoy!
Notes
For an even richer flavor, try using chocolate graham crackers. If the filling is too thick, a splash of milk can help achieve the perfect consistency.
