Ingredients
- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1/4 cup sour cream
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup graham cracker crumbs
- 1/4 cup butter, melted
Instructions
- Prepare the crust: In a mixing bowl, combine graham cracker crumbs and melted butter. Press the mixture firmly into the bottom of your cupcake liners to form a solid crust.
- Make the filling: In a larger bowl, mix softened cream cheese until smooth. Gradually add sugar and beat until silky. Mix in the sour cream and eggs one at a time, followed by the vanilla extract. Be careful not to overmix, as this can introduce air bubbles.
- Fill the cups: Scoop the filling into the crusts, filling each liner about ¾ full. This will leave room for rising.
- Bake: Preheat your oven to 325°F (160°C) and bake for 15-20 minutes until the edges are set, and the center is slightly jiggly. Remove them from the oven and let them cool to room temperature.
- Chill: Once cooled, refrigerate for at least four hours, or overnight for the best flavor and texture.
