Instructions
- Preheat your oven to 325°F (163°C).
- Prepare the crust by combining crushed graham crackers and melted butter until it resembles wet sand. Press into cupcake liners in a muffin tin.
- Make the filling by blending cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each. Stir in vanilla.
- Fill each liner about three-quarters full with the cheesecake mixture.
- Bake for 20-25 minutes, until centers are set but jiggly.
- Cool on a rack, then refrigerate for at least 4 hours or overnight.
- Serve with your favorite toppings.
