Ingredients
- 2 ¾ cups all-purpose flour (or gluten-free flour)
- 1 cup unsalted butter, softened
- ¾ cup granulated sugar
- ¾ cup brown sugar (dark brown for extra flavor)
- 2 large eggs
- 2 tsp vanilla extract
- ½ tsp almond extract (optional)
- 2 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- Royal icing for decoration
- Colorful sprinkles (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Cream the unsalted butter, granulated sugar, and brown sugar until light and fluffy (3-5 minutes).
- Add the eggs one at a time, mixing thoroughly, then add the vanilla extract.
- Combine the dry ingredients (flour, baking powder, baking soda, and salt) in a separate bowl and gradually mix into the wet ingredients.
- Chill the dough in the refrigerator for at least 30 minutes.
- Roll the chilled dough to ¼ inch thick and cut out Hello Kitty shapes.
- Bake for 8-10 minutes, until edges are golden.
- Cool completely before decorating with royal icing and sprinkles.
Notes
Chill the dough for best results; it prevents cookies from spreading too thin. Ensure your leavening agents are fresh for proper rise.
