Ingredients

  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 2 large eggs
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • Pinch of salt
  • 2 ¾ cups all-purpose flour
  • 3 tablespoons granulated sugar (for rolling)
  • 2 tablespoons ground cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two cookie sheets with parchment paper.
  2. Cream together 1 cup of softened unsalted butter with 1 ½ cups of granulated sugar until light and fluffy.
  3. Add in 2 large eggs, one at a time, beating well after each addition.
  4. Mix in 2 teaspoons of cream of tartar, 1 teaspoon of baking soda, and a pinch of salt.
  5. Gradually add 2 ¾ cups of all-purpose flour, stirring until just combined.
  6. Combine 3 tablespoons of granulated sugar with 2 tablespoons of ground cinnamon in a small bowl.
  7. Roll the dough into 1.5-inch balls and then coat each ball in the cinnamon-sugar mixture.
  8. Place the coated balls onto the prepared cookie sheets, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes until the edges are lightly golden.
  10. Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring to wire racks.
  11. Serve warm or at room temperature.
