A classic Chicken Schnitzel recipe with a crispy breadcrumb coating, served with a touch of lemon for freshness.

  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

  • 4 boneless chicken breasts or thighs
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 cups breadcrumbs (panko or traditional)
  • 1/4 cup oil or butter (for frying)
  • Salt and pepper to taste
  • Fresh herbs (thyme or oregano) to taste
  • 1 lemon, for serving

Instructions

  1. Prepare the Chicken: Place chicken breasts between plastic wrap and pound to 1/2 inch thickness. Season with salt and pepper.
  2. Set Up Dredging Station: In three bowls, put flour, whisked eggs, and seasoned breadcrumbs.
  3. Coat the Chicken: Dip chicken first in flour, then egg, and finally breadcrumbs, pressing to adhere.
  4. Heat the Oil: In a skillet, heat oil or butter over medium heat until shimmering.
  5. Fry the Schnitzel: Cook each piece for 3-4 minutes on each side until golden brown and cooked through.
  6. Drain and Serve: Remove schnitzels and let them rest on paper towels. Serve with lemon wedges.

Notes

For a lighter version, try baking the schnitzel instead of frying it. They can also be made gluten-free with special breadcrumbs or nuts.
