Ingredients
- 4 boneless chicken breasts or thighs
- 1 cup all-purpose flour
- 2 large eggs
- 2 cups breadcrumbs (panko or traditional)
- 1/4 cup oil or butter (for frying)
- Salt and pepper to taste
- Fresh herbs (thyme or oregano) to taste
- 1 lemon, for serving
Instructions
- Prepare the Chicken: Place chicken breasts between plastic wrap and pound to 1/2 inch thickness. Season with salt and pepper.
- Set Up Dredging Station: In three bowls, put flour, whisked eggs, and seasoned breadcrumbs.
- Coat the Chicken: Dip chicken first in flour, then egg, and finally breadcrumbs, pressing to adhere.
- Heat the Oil: In a skillet, heat oil or butter over medium heat until shimmering.
- Fry the Schnitzel: Cook each piece for 3-4 minutes on each side until golden brown and cooked through.
- Drain and Serve: Remove schnitzels and let them rest on paper towels. Serve with lemon wedges.
Notes
For a lighter version, try baking the schnitzel instead of frying it. They can also be made gluten-free with special breadcrumbs or nuts.
