Ingredients
- 2 boneless chicken breasts or thighs
- 8 ounces linguine
- 3 cloves garlic, minced
- 3 tablespoons unsalted butter
- 1 cup asparagus or spinach
- 1/2 cup heavy cream (optional)
- 1/2 cup white wine
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh basil, chopped
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh chives, chopped
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Cook the linguine: Begin by boiling a large pot of salted water. Add the linguine and cook according to the package directions until al dente. Reserve about a cup of the pasta water, and then drain the noodles.
- Prepare the chicken: While the pasta cooks, season the chicken with salt, pepper, and herbs. In a large skillet, heat butter over medium heat until melted. Add the chicken and cook for 5-7 minutes, turning occasionally, until golden and cooked through. Remove from the pan and set aside.
- Sauté the aromatics: In the same skillet, add a bit more butter if needed, and toss in the minced garlic. Sauté for about a minute until fragrant, making sure not to let it burn.
- Add the vegetables: Toss in the asparagus (or your chosen veggies) and cook for 3-4 minutes until just tender. If you’re using spinach, add it just a minute before the end to wilt it gently.
- Mix the sauce: Pour in the white wine, scraping any bits off the bottom of the pan. Let it simmer for a couple of minutes before adding the cream if you decided to use it. Stir gently to combine.
- Combine all ingredients: Add the drained linguine and cooked chicken back into the skillet. Toss everything together, adding a splash of reserved pasta water to reach your desired sauce consistency.
- Finish with cheese and herbs: Finally, fold in the grated Parmesan cheese and fresh herbs, and a squeeze of lemon juice if you wish. Taste and adjust seasoning as needed.
- Serve: Plate the Chicken Linguine hot and garnish with extra cheese and herbs. Don’t forget a sprinkle of crushed red pepper for those who enjoy a bit of heat!
Notes
Feel free to substitute ingredients based on what you have available. Shrimp can be used instead of chicken for a lighter twist.
