Ingredients

  • 2 boneless chicken breasts or thighs
  • 8 ounces linguine
  • 3 cloves garlic, minced
  • 3 tablespoons unsalted butter
  • 1 cup asparagus or spinach
  • 1/2 cup heavy cream (optional)
  • 1/2 cup white wine
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the linguine: Begin by boiling a large pot of salted water. Add the linguine and cook according to the package directions until al dente. Reserve about a cup of the pasta water, and then drain the noodles.
  2. Prepare the chicken: While the pasta cooks, season the chicken with salt, pepper, and herbs. In a large skillet, heat butter over medium heat until melted. Add the chicken and cook for 5-7 minutes, turning occasionally, until golden and cooked through. Remove from the pan and set aside.
  3. Sauté the aromatics: In the same skillet, add a bit more butter if needed, and toss in the minced garlic. Sauté for about a minute until fragrant, making sure not to let it burn.
  4. Add the vegetables: Toss in the asparagus (or your chosen veggies) and cook for 3-4 minutes until just tender. If you’re using spinach, add it just a minute before the end to wilt it gently.
  5. Mix the sauce: Pour in the white wine, scraping any bits off the bottom of the pan. Let it simmer for a couple of minutes before adding the cream if you decided to use it. Stir gently to combine.
  6. Combine all ingredients: Add the drained linguine and cooked chicken back into the skillet. Toss everything together, adding a splash of reserved pasta water to reach your desired sauce consistency.
  7. Finish with cheese and herbs: Finally, fold in the grated Parmesan cheese and fresh herbs, and a squeeze of lemon juice if you wish. Taste and adjust seasoning as needed.
  8. Serve: Plate the Chicken Linguine hot and garnish with extra cheese and herbs. Don’t forget a sprinkle of crushed red pepper for those who enjoy a bit of heat!
