- 1 cup unsalted butter, softened
- 1 cup brown sugar
- ½ cup honey
- 1 cup pumpkin puree
- 1 large egg

Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream together the butter, brown sugar, and honey until light and fluffy.
- Add the pumpkin puree and egg, mixing until fully incorporated.
- Whisk together the dry ingredients: flour, baking powder, baking soda, and spices in a separate bowl.
- Combine the dry ingredients with the pumpkin mixture, folding gently until just mixed.
- Scoop the dough onto the prepared baking sheet and slightly flatten if desired.
- Bake for 12-15 minutes, until the edges are lightly browned.
- Cool the cookies on a wire rack and drizzle with honey before serving.
Notes
Allow the butter to soften at room temperature prior to creaming for best results. Chilling the dough can improve the texture of the cookies.
