- 16 oz Cream Cheese, softened
- 1 cup Granulated Sugar
- 1 cup Graham Crackers, crushed
- 1/2 cup Butter, melted
- 2 Large Eggs
- 1 tsp Peppermint Extract
- Green Food Coloring
- 1 tsp Vanilla Extract
Instructions
- Preheat the oven to 325°F (165°C) and line a muffin tin with paper liners.
- Mix the crushed graham crackers with melted butter and sugar until evenly coated. Spoon into muffin liners and press down.
- Beat the softened cream cheese until smooth, then gradually add sugar until creamy.
- Add in eggs, peppermint extract, and vanilla, mixing until just blended.
- Include a few drops of green food coloring and mix to reach the desired hue.
- Spoon the cheesecake filling over the prepared crusts, filling each cup until nearly full.
- Bake for 20-25 minutes, until the edges are set but the center is slightly jiggly.
- Cool for 10 minutes in the tin, then transfer to a wire rack to cool completely.
- Refrigerate for at least 2 hours before serving.
- Top with green frosting and festive decorations before serving.
