Ingredients

  • 1 pound Fresh Scallops
  • 2 tablespoons Olive Oil
  • 3-4 tablespoons Unsalted Butter
  • 2 cloves Garlic, minced
  • Fresh Lemon Juice and Zest from 1 lemon
  • Sea Salt, to taste
  • Black Pepper, to taste
  • Fresh Parsley or Chives, for garnish

Instructions

  1. Prepare the Scallops: Rinse the scallops under cold water, then pat them dry with paper towels.
  2. Season both sides of the scallops with sea salt and freshly cracked black pepper.
  3. Heat a large skillet over medium-high heat and add olive oil until shimmering.
  4. Sear the scallops for 2-3 minutes on one side until a golden crust forms, then flip and cook for another 2 minutes.
  5. Add butter, garlic, lemon juice, and zest to the skillet, swirling gently until the butter melts and coats the scallops.
  6. Finish with freshly chopped parsley or chives.
  7. Serve promptly with the lemon butter sauce drizzled over the top.

Notes

Avoid overcrowding the pan and ensure scallops are dry for the best sear.
