- 2 Boneless Chicken Breasts or Thighs
- 8 oz Cream Cheese
- 4 cups Bone Broth or Chicken Broth
- 4 cloves Garlic, minced
- 1 Onion, diced
- 2 Carrots, diced
- 2 Celery stalks, diced
- 1 tsp Fresh Thyme, chopped
- 1 tsp Fresh Parsley, chopped
- 1 cup Spinach or Kale (optional)
- Salt and Pepper to taste
Instructions
- Prep the base: Dice your onion, garlic, carrots, and celery.
- Layer it up: In the slow cooker, add the chopped vegetables and place the boneless chicken on top.
- Season generously: Sprinkle in your diced herbs, salt, and pepper. Pour in the broth until everything is just covered.
- Add the cream cheese on top without stirring.
- Slow Cook: Cook on low for 6-8 hours or high for 3-4 hours.
- Finish and serve: Once the chicken is cooked, shred it in the pot and stir in fresh spinach.

Use fresh ingredients for the best flavor. For a twist, add a hint of cayenne for heat or substitute chicken thighs with rotisserie chicken for quicker prep.
