- 2 cups Old Fashioned Rolled Oats
- 1 cup Nut Butter (peanut butter or almond butter)
- 1/2 cup Honey or Maple Syrup
- 1/4 cup Fresh Lemon Juice
- 2 tablespoons Lemon Zest
- 1/4 teaspoon Salt
- Optional: Coconut flakes, chopped nuts, or dried fruits
Instructions
- Prepare your workspace by gathering your ingredients and a mixing bowl. Lay down parchment paper on a baking sheet.
- Mix the wet ingredients: In a medium bowl, combine the nut butter, honey (or maple syrup), fresh lemon juice, and salt. Stir until smooth.
- Add the zest and oats, gently folding until all oats are nicely coated.
- Form small mounds with the mixture and place them on the parchment paper.
- Chill the cookies in the refrigerator for about 30-45 minutes to firm up.
