Instructions
- Preheat your oven to 425°F (220°C).
- Prepare your carrots by peeling and trimming them to your desired length.
- Season the carrots in a bowl with olive oil, honey, salt, and pepper.
- Add the fresh thyme leaves and mix well.
- Arrange the carrots on a parchment-lined baking sheet in a single layer.
- Roast in the oven for 25-30 minutes, tossing halfway through.
- Serve warm, garnished with extra thyme if desired.
