Ingredients
- 1 center-cut pork loin roast
- 1 cup unsweetened apple cider
- 2 tablespoons balsamic vinegar
- 3 cloves garlic, minced
- 1 large onion, sliced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large oven-safe skillet, heat olive oil over medium-high heat. Season the pork loin with salt and pepper, then sear on all sides until golden, about 4 minutes per side.
- Remove the pork and set aside. In the same skillet, sauté onions until translucent, about 2-3 minutes. Add garlic, rosemary, and thyme.
- Pour in apple cider and balsamic vinegar, scraping the bottom of the pan. Bring to a gentle simmer.
- Return the pork to the skillet and spoon sauce over it. Cover and place in the oven.
- Cook for about 45 minutes, until the internal temperature reaches 145°F (63°C).
- Let rest for 10 minutes before slicing. Serve with the sauce over the pork.
Notes
