  • 1 tsp smoked paprika
  • 1 onion, diced
  • 1 bell pepper, diced
  • ¼ cup fresh parsley, chopped
  • 1 cup white wine
  • Salt and pepper, to taste

Instructions

  1. Prep your ingredients: Dice onions, chop bell peppers, mince garlic, and clean your seafood.
  2. In a large skillet, heat olive oil over medium heat. Add onions and bell peppers; cook until they soften and turn translucent.
  3. Stir in minced garlic and smoked paprika, cooking just until fragrant—about a minute.
  4. Pour in your tomatoes and white wine. Stir well, allowing the mixture to simmer for about 10 minutes so the flavors meld together.
  5. Add in the shrimp and mussels (or your chosen seafood). Cover the skillet and simmer until the shrimp turn pink and the mussels open—around 5 to 7 minutes.
  6. Season with salt and pepper to taste, then sprinkle fresh parsley over the dish right before serving.
