Ingredients

  • 4 medium sweet potatoes
  • 1 lb ground turkey
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 cup bell peppers, diced
  • 2 cups spinach, chopped
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork a few times.
  3. Place the sweet potatoes on a baking sheet lined with parchment paper and bake for about 45-50 minutes or until tender.
  4. While the potatoes bake, heat olive oil in a skillet over medium heat and sauté onions and garlic until golden brown.
  5. Add the ground turkey, season with salt, pepper, cumin, and paprika. Cook until the turkey is no longer pink.
  6. Toss in bell peppers and spinach, cooking until soft.
  7. Remove baked sweet potatoes, let cool slightly, and cut them in half lengthwise.
  8. Scoop out some flesh and mix it with the turkey filling.
  9. Fill each sweet potato half with the filling, top with cheese if desired, and bake for an additional 10 minutes.
  10. Serve warm, garnished with fresh herbs or a dollop of sour cream.

Notes

For a vegetarian twist, substitute ground turkey with black beans. Store any leftovers in an airtight container in the fridge for up to four days.
