Ingredients
- 4 medium sweet potatoes
- 1 lb ground turkey
- 2 cloves garlic, minced
- 1 onion, chopped
- 1 cup bell peppers, diced
- 2 cups spinach, chopped
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 1/2 cup shredded cheese (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork a few times.
- Place the sweet potatoes on a baking sheet lined with parchment paper and bake for about 45-50 minutes or until tender.
- While the potatoes bake, heat olive oil in a skillet over medium heat and sauté onions and garlic until golden brown.
- Add the ground turkey, season with salt, pepper, cumin, and paprika. Cook until the turkey is no longer pink.
- Toss in bell peppers and spinach, cooking until soft.
- Remove baked sweet potatoes, let cool slightly, and cut them in half lengthwise.
- Scoop out some flesh and mix it with the turkey filling.
- Fill each sweet potato half with the filling, top with cheese if desired, and bake for an additional 10 minutes.
- Serve warm, garnished with fresh herbs or a dollop of sour cream.
Notes
For a vegetarian twist, substitute ground turkey with black beans. Store any leftovers in an airtight container in the fridge for up to four days.
