Ingredients
- 1 lb boneless, skinless chicken thighs or breasts
- ½ cup creamy or crunchy peanut butter
- ¼ cup soy sauce
- 2 tablespoons brown sugar
- Juice of 1 lime
- 2 cloves garlic, minced
- 2 tablespoons ginger, minced
- ½ cup coconut milk
- Wooden or metal skewers
Instructions
- Marinate the Chicken: In a bowl, mix peanut butter, soy sauce, brown sugar, lime juice, garlic, and ginger until smooth. Coat chicken in marinade and refrigerate for at least 30 minutes.
- Prepare the Skewers: Soak wooden skewers in water for 30 minutes.
- Preheat the Grill: Heat grill to medium-high.
- Assemble the Skewers: Thread marinated chicken onto skewers, leaving space between pieces.
- Grill: Cook skewers for 5–7 minutes on each side until golden and cooked through (internal temp of 165°F).
- Prepare Dipping Sauce: Heat remaining marinade in a saucepan until boiling and reduce for thickness.
- Serve: Garnish skewers with cilantro or crushed peanuts and serve with dipping sauce.
Notes
For a vegetarian option, substitute chicken with tofu. Serve with cucumber salad or jasmine rice.
