Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • ½ cup creamy or crunchy peanut butter
  • ¼ cup soy sauce
  • 2 tablespoons brown sugar
  • Juice of 1 lime
  • 2 cloves garlic, minced
  • 2 tablespoons ginger, minced
  • ½ cup coconut milk
  • Wooden or metal skewers

Instructions

  1. Marinate the Chicken: In a bowl, mix peanut butter, soy sauce, brown sugar, lime juice, garlic, and ginger until smooth. Coat chicken in marinade and refrigerate for at least 30 minutes.
  2. Prepare the Skewers: Soak wooden skewers in water for 30 minutes.

  4. Assemble the Skewers: Thread marinated chicken onto skewers, leaving space between pieces.
