Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 cup milk (whole or plant-based)
- 1 cup fresh blueberries
- Zest of 1 orange
- 1/2 cup fresh orange juice
Instructions
- Preheat your oven to 375°F (190°C).
- Line a 12-cup muffin tin with paper liners or lightly grease it.
- In a large bowl, whisk together flour, baking powder, baking soda, and sugars.
- In another bowl, beat the eggs and mix in melted butter, milk, orange juice, and zest.
- Pour the wet mixture into the dry ingredients and stir gently until just combined.
- Fold in the blueberries.
- Fill each muffin cup about two-thirds full.
- Bake for 18-20 minutes, until golden brown and a toothpick comes out clean.
- Cool in the pan for 5 minutes before transferring to a wire rack.
- Serve warm or at room temperature.
Notes
For a crunch, top muffins with streusel or oats before baking. Sprinkle with powdered sugar before serving for a festive touch.
