  • 2 tsp baking powder

  • 1 cup milk (whole or plant-based)
  • 1 cup fresh blueberries
  • Zest of 1 orange
  • 1/2 cup fresh orange juice

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Line a 12-cup muffin tin with paper liners or lightly grease it.
  3. In a large bowl, whisk together flour, baking powder, baking soda, and sugars.
  4. In another bowl, beat the eggs and mix in melted butter, milk, orange juice, and zest.
  5. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  6. Fold in the blueberries.
  7. Fill each muffin cup about two-thirds full.
  8. Bake for 18-20 minutes, until golden brown and a toothpick comes out clean.
  9. Cool in the pan for 5 minutes before transferring to a wire rack.
