Ingredients
- 2 Honeycrisp apples, sliced
- 1 cup feta cheese, crumbled
- 4 cups mixed greens (baby spinach or arugula)
- 1/2 cup walnuts or pecans, toasted
- 1/4 cup fresh mint or basil, chopped
- 1/4 cup olive oil
- 2 tbsp fresh lemon juice
- 1 tbsp honey
- 1 tsp mustard
- Salt and pepper to taste
Instructions
- Wash the mixed greens thoroughly and pat dry.
- Slice the Honeycrisp apples into thin wedges, leaving the skin on.
- In a large bowl, combine the mixed greens, apple slices, and crumbled feta.
- If using nuts, toast them in a dry skillet over medium heat until fragrant.
- In a separate small bowl, whisk together olive oil, lemon juice, honey, mustard, and season with salt and pepper.
- Pour the dressing over the salad and toss gently to coat.
- Sprinkle the toasted nuts and fresh herbs on top, and serve immediately.
Notes
For variations, substitute Honeycrisp apples with Granny Smith or Fuji apples, and feta with goat cheese if preferred. Serve immediately for best texture.
