- Mixed Greens (arugula, spinach, kale)
- Pomegranate Seeds
- Fresh Oranges
- Fresh Grapefruit
- Pecans or Walnuts
- Red Onion (thinly sliced)
- Citrus Vinaigrette: Fresh orange juice, olive oil, honey, salt, and pepper
Instructions
- Wash and dry the mixed greens thoroughly.
- In a large bowl, toss the mixed greens with thinly sliced red onion.
- Sprinkle in the pomegranate seeds and sliced citrus fruits.
- Toast the pecans or walnuts in a dry skillet for about 5 minutes.
- In a small bowl, whisk together the fresh orange juice, olive oil, honey, salt, and pepper.
- Just before serving, drizzle the vinaigrette over the salad and toss gently.
