Ingredients

  • 4 cups green cabbage, shredded
  • 2 sweet apples (Fuji or Honeycrisp), cored and sliced
  • 1 large carrot, shredded
  • 1 cup dried cranberries
  • 1 cup mayonnaise
  • ½ cup Greek yogurt
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey or sugar
  • Salt and pepper to taste

Instructions

  1. Shred the cabbage and place it in a large bowl.
  2. Core and slice the apples, then add them to the bowl.
  3. Shred the carrot and mix it into the bowl.
  4. Add the dried cranberries to the mix.
  5. In a separate bowl, whisk together the mayonnaise, Greek yogurt, apple cider vinegar, and honey or sugar until smooth.
  6. Pour the dressing over the cabbage mixture and toss gently until everything is well-coated. Season with salt and pepper to taste.
  7. Cover and chill in the refrigerator for about one hour before serving.
