Instructions
- Prep the chicken by cutting it into smaller strips and using a meat mallet to flatten slightly.
- Set up your breading station with three bowls: one for seasoned flour, one for beaten eggs, and one for coconut or panko breadcrumbs.
- Dredge chicken in flour, dip in egg, and coat with coconut mixture.
- Place breaded chicken on a lined baking sheet, ensuring space for crisping.
- Bake at 400°F for 20-25 minutes or pan-fry until golden brown.
- For the dip, mix sweet chili sauce with lime juice, garlic or soy sauce if desired.
Notes
Ensure you don’t overcrowd the baking sheet or pan, as this can prevent crispiness. Allow chicken to rest for a minute after cooking.
