- 2 blood oranges (zest and juice)
- 1/2 cup extra virgin olive oil
- 1 1/2 cups all-purpose flour
- 3 large eggs
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon ground cardamom
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
- In a bowl, whisk together the flour, baking powder, cardamom, and salt.
- In another bowl, beat the eggs and sugar together until light and fluffy. Gradually add the olive oil, blood orange juice, and zest.
- Gently fold the dry ingredients into the wet mixture until just combined to avoid overmixing.
- Pour the batter into the prepared cake pan and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
This cake can be served plain, with an orange glaze, or with whipped cream. Pay attention to the baking time for perfect texture.
