  • 2 blood oranges (zest and juice)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, cardamom, and salt.
  3. In another bowl, beat the eggs and sugar together until light and fluffy. Gradually add the olive oil, blood orange juice, and zest.
  4. Gently fold the dry ingredients into the wet mixture until just combined to avoid overmixing.
  5. Pour the batter into the prepared cake pan and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  6. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
