- 2 ½ cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 cup brown sugar
- ½ cup granulated sugar
- 1 large egg
- 1 teaspoon ground cinnamon

- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- In a large mixing bowl, cream together the unsalted butter and both sugars using an electric mixer until light and fluffy (2-3 minutes).
- Beat in the egg until fully incorporated. Optionally, add a tablespoon of vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and spices until evenly mixed.
- Gradually add the dry mixture to the butter-sugar mixture, mixing until just combined.
- Scoop tablespoon-sized portions of dough onto prepared baking sheets, spacing them 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Let cookies cool on the baking sheet for a few minutes, then transfer to wire racks to cool completely.
- Dust with powdered sugar if desired, or enjoy as is.
Notes
