- 8 ounces softened cream cheese
- ½ cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large bowl, whisk together flour, baking soda, ground ginger, and ground cinnamon.
- In another bowl, beat together softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Mix in molasses and vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with water or milk until combined.
- In a separate bowl, blend cream cheese with powdered sugar and vanilla.
- Pour half the batter into the loaf pan, add the cream cheese mixture, and top with the remaining batter, swirling gently.
- Bake for about 60 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Allow the loaf to cool properly in the pan for best results. Store in an airtight container for up to three days or refrigerate for a week.
