Ingredients
- 4 boneless, skinless chicken breasts
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons fresh parsley, chopped
- 4 large carrots, sliced
- 2 tablespoons olive oil or butter
- Salt and pepper to taste
- Optional: paprika or red pepper flakes
Instructions
- Pat chicken dry and season with salt, pepper, and herbs. Marinate for at least 30 minutes.
- In a large skillet over medium heat, add olive oil or butter. Sauté minced garlic for about 30 seconds until fragrant.
- Add marinated chicken to the skillet; cook for 6-7 minutes on each side until golden brown and cooked through.
- Remove chicken and keep warm.
- Add carrots to the same skillet and sauté for 10-12 minutes until tender and caramelized. Season with salt and pepper.
- Plate sliced chicken with the caramelized carrots and drizzle with pan juices.
- Garnish with fresh herbs or lemon juice before serving.
Notes
Marinating chicken for several hours enhances its flavor. Adjust cooking times for thicker chicken pieces.
