Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped
  • 4 large carrots, sliced
  • 2 tablespoons olive oil or butter
  • Salt and pepper to taste
  • Optional: paprika or red pepper flakes

Instructions

  1. Pat chicken dry and season with salt, pepper, and herbs. Marinate for at least 30 minutes.
  2. In a large skillet over medium heat, add olive oil or butter. Sauté minced garlic for about 30 seconds until fragrant.
  3. Add marinated chicken to the skillet; cook for 6-7 minutes on each side until golden brown and cooked through.
  4. Remove chicken and keep warm.
  5. Add carrots to the same skillet and sauté for 10-12 minutes until tender and caramelized. Season with salt and pepper.
  6. Plate sliced chicken with the caramelized carrots and drizzle with pan juices.
  7. Garnish with fresh herbs or lemon juice before serving.
