Ingredients

  • 2 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 cup espresso or strong brewed coffee
  • 3 large eggs
  • 1 cup buttermilk
  • 1/2 cup unsalted butter, melted
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, and baking soda. Whisk until well mixed.
  3. In a separate bowl, whisk eggs, espresso, buttermilk, and melted butter until incorporated.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Evenly divide the batter between the prepared pans and smooth the tops.
  6. Bake for 25 to 30 minutes until a toothpick inserted in the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  8. For the ganache, heat heavy cream until steaming, pour over chopped dark chocolate, let sit, then stir until smooth.
  9. Layer and spread the ganache between the cooled cakes and on top for a luxurious finish.

Notes
