Ingredients
- 2 cups all-purpose flour
- 1 3/4 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 cup espresso or strong brewed coffee
- 3 large eggs
- 1 cup buttermilk
- 1/2 cup unsalted butter, melted
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, and baking soda. Whisk until well mixed.
- In a separate bowl, whisk eggs, espresso, buttermilk, and melted butter until incorporated.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Evenly divide the batter between the prepared pans and smooth the tops.
- Bake for 25 to 30 minutes until a toothpick inserted in the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- For the ganache, heat heavy cream until steaming, pour over chopped dark chocolate, let sit, then stir until smooth.
- Layer and spread the ganache between the cooled cakes and on top for a luxurious finish.
Notes
Be careful not to overmix the batter for a soft crumb. Always check cakes a few minutes before the recommended time.
