- 2 cups Fusilli or Cellentani pasta
- 1 cup freshly grated Parmesan cheese
- 2 tablespoons freshly cracked black pepper
- 3 tablespoons unsalted butter or olive oil
- 2 cloves garlic, minced
- Salt, to taste
- Fresh parsley or basil (optional), for garnish
Instructions
- Boil the Pasta: In a large pot of salted water, bring the pasta to a boil. Follow package instructions until al dente, stirring occasionally. Reserve some pasta water before draining.
- Sauté the Aromatics: In a large skillet, melt the butter over medium heat and add minced garlic. Cook for about 1 minute until fragrant but not browned.
- Incorporate the Pasta: Add the drained pasta to the skillet, tossing it with the garlic-infused butter to ensure it’s evenly coated.
- Add Cheese and Pepper: Sprinkle in the grated Parmesan and freshly cracked black pepper while tossing the pasta. If the mixture appears dry, add reserved pasta water, one tablespoon at a time, until desired creaminess is achieved.
- Taste and Season: Season with salt to taste, adding more black pepper if you love extra spice.
- Garnish and Serve: Plate the twirls, garnishing with fresh parsley or basil for that pop of color. Enjoy!
Notes
For a lighter version, you can substitute butter with olive oil. Ensure to finish cooking the pasta in the sauce for the best flavor absorption.
