A comforting and creamy soup filled with earthy mushrooms, fresh herbs, and rich broth, perfect for chilly winter days.

  • Total Time: 55 minutes
  • Yield: 6 servings

Ingredients

  • 1 lb baby bella mushrooms, chopped
  • 1 lb cremini mushrooms, chopped
  • 3 cloves garlic, minced
  • 1 yellow onion, finely chopped
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream or coconut milk
  • 2 tbsp fresh thyme
  • 2 tbsp fresh rosemary
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Sauté the chopped onions and minced garlic in butter over medium heat in a large pot until translucent, about 5 minutes.
  2. Add the mushrooms and cook for another 8-10 minutes until golden brown.
  3. Pour in the broth and season with salt, pepper, thyme, and rosemary. Bring to a gentle boil, then reduce heat to simmer for about 20 minutes.
  4. Stir in the heavy cream or coconut milk, taste, and adjust seasoning as needed.
  5. Simmer for another 5-10 minutes to allow flavors to meld together.
  6. Serve hot with fresh bread or crackers for a delightful crunch.

Notes

For a vegetarian option, use vegetable broth and consider substituting heavy cream with coconut milk. Feel free to substitute ingredients based on availability.
