Ingredients
- 1 lb baby bella mushrooms, chopped
- 1 lb cremini mushrooms, chopped
- 3 cloves garlic, minced
- 1 yellow onion, finely chopped
- 4 cups chicken or vegetable broth
- 1 cup heavy cream or coconut milk
- 2 tbsp fresh thyme
- 2 tbsp fresh rosemary
- 2 tbsp butter
- Salt and pepper to taste
Instructions
- Sauté the chopped onions and minced garlic in butter over medium heat in a large pot until translucent, about 5 minutes.
- Add the mushrooms and cook for another 8-10 minutes until golden brown.
- Pour in the broth and season with salt, pepper, thyme, and rosemary. Bring to a gentle boil, then reduce heat to simmer for about 20 minutes.
- Stir in the heavy cream or coconut milk, taste, and adjust seasoning as needed.
- Simmer for another 5-10 minutes to allow flavors to meld together.
- Serve hot with fresh bread or crackers for a delightful crunch.

For a vegetarian option, use vegetable broth and consider substituting heavy cream with coconut milk. Feel free to substitute ingredients based on availability.
