Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Red and green gel food coloring

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream the softened butter and sugars in a large mixing bowl until light and fluffy, about 3-4 minutes. Add eggs one at a time, mixing well with the vanilla extract.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet ingredients until just combined.
  4. Divide the dough into two portions; color one with red food coloring and the other with green.
  5. Roll out each colored dough on a floured surface into 1/4 inch thick rectangles.
  6. Layer the green dough on top of the red and roll them into a log. Wrap in plastic wrap and refrigerate for at least 1 hour.
  7. Slice the log into 1/4-inch thick rounds and place on prepared baking sheets. Bake for 8-10 minutes or until lightly golden.
  8. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
