Ingredients
- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Red and green gel food coloring
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream the softened butter and sugars in a large mixing bowl until light and fluffy, about 3-4 minutes. Add eggs one at a time, mixing well with the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet ingredients until just combined.
- Divide the dough into two portions; color one with red food coloring and the other with green.
- Roll out each colored dough on a floured surface into 1/4 inch thick rectangles.
- Layer the green dough on top of the red and roll them into a log. Wrap in plastic wrap and refrigerate for at least 1 hour.
- Slice the log into 1/4-inch thick rounds and place on prepared baking sheets. Bake for 8-10 minutes or until lightly golden.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Ensure butter is softened but not melted for the right cookie texture. Use a sharp knife for clean slicing to retain swirls.
