Ingredients

  • 2 cups ricotta cheese
  • 1 cup almond flour
  • 1/2 cup powdered sugar
  • 2 large eggs
  • 1 tsp baking powder
  • 1/4 cup milk (dairy or almond)
  • Powdered sugar for dusting
  • Honey for drizzling

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, powdered sugar, and baking powder.
  3. Incorporate the ricotta cheese, mixing until fully combined.
  4. Add the eggs and blend until fully incorporated.
  5. Gradually add milk until the dough is smooth but not too runny.
  6. Scoop the mixture into pillow forms and place them on the baking sheet.
  7. Bake for 20-25 minutes until golden brown.
  8. Cool slightly on a wire rack and dust with powdered sugar and drizzle with honey before serving.

Notes
