- 2 cups ricotta cheese
- 1 cup almond flour
- 1/2 cup powdered sugar
- 2 large eggs
- 1 tsp baking powder
- 1/4 cup milk (dairy or almond)
- Powdered sugar for dusting
- Honey for drizzling
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, powdered sugar, and baking powder.
- Incorporate the ricotta cheese, mixing until fully combined.
- Add the eggs and blend until fully incorporated.
- Gradually add milk until the dough is smooth but not too runny.
- Scoop the mixture into pillow forms and place them on the baking sheet.
- Bake for 20-25 minutes until golden brown.
- Cool slightly on a wire rack and dust with powdered sugar and drizzle with honey before serving.
Notes
For added flavor, mix in a teaspoon of vanilla extract. Use almond meal for a denser texture if needed.
