Ingredients
- 1 lb Italian sausage (sweet or spicy)
- 1 cup ditalini pasta
- 1 cup freshly grated parmesan cheese
- 1 cup chopped onions
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 cups fresh spinach or kale
- Fresh herbs (basil, thyme, or parsley)
- Salt and pepper to taste
Instructions
- Brown the sausage in a large pot with olive oil over medium heat for 5-7 minutes.
- Add onions and garlic, sauté for 3-4 minutes until translucent.
- Pour in the broth and bring to a gentle simmer.
- Add ditalini pasta and cook according to package instructions (8-10 minutes).
- Lower the heat, stir in cream and parmesan until melted and creamy.
- Add spinach or kale, season with salt and pepper.
- Serve warm, garnished with extra parmesan and fresh herbs.
Notes
For a lighter option, use turkey or chicken sausage. You can also substitute ditalini with small shells or orzo.
