- Beef Roast (preferably chuck or ribeye)
- Cranberry Sauce (homemade or store-bought)
- Fresh Garlic
- Diced Onions
- Fresh Rosemary
- Fresh Thyme
- Olive Oil or Butter
- Salt
- Pepper
Instructions
- Start with a well-trimmed beef roast. Pat it dry with paper towels to ensure a good sear.
- Sprinkle salt and pepper all over the roast generously.
- In a heavy oven-safe skillet, heat olive oil or butter over medium-high heat. Add the beef and sear until all sides are browned, about 3-4 minutes per side.
- Remove the roast from the skillet, add diced onions and minced garlic, and sauté until translucent and fragrant.
- Return the roast to the skillet, spread cranberry sauce on top, and top with fresh herbs. Add a splash of broth if desired.
- Cover the skillet or transfer it to a preheated oven at 350°F (175°C). Roast for about 1.5 to 2 hours, or until the internal temperature reaches your desired doneness.
- Let the roast rest for about 15 minutes before slicing to allow the juices to redistribute.
Notes
Make sure to sear the beef properly for best flavor and allow the roast to rest after cooking to retain juiciness.
