Ingredients

  • 1 cup sago pearls
  • 1 cup coconut milk
  • ½ cup sugar (adjust according to preference)
  • 2 ripe mangoes, peeled and cubed
  • 4 cups water
  • Pinch of salt

Instructions

  1. Rinse the sago pearls under cold water to remove excess starch.
  2. Bring 4 cups of water to a gentle boil, add the rinsed sago pearls, and lower the heat. Stir frequently until the pearls turn translucent (15-20 minutes). Drain and set aside.
  3. In another pot, combine coconut milk, sugar, and a pinch of salt. Heat gently, stirring to dissolve the sugar.
  4. Once sweetened to your liking, fold in the cooked sago pearls and simmer on low for 5 minutes.
  5. Prepare the mango by peeling and chopping it into small cubes.
  6. Layer the coconut sago mixture in cups or bowls, top with diced mango, and garnish with mint or toasted coconut flakes if desired.
  7. Chill for at least an hour before serving.

Notes

This dessert is best served chilled. Adjust sweetness based on the ripeness of mangoes.
