Ingredients
- 1 cup sago pearls
- 1 cup coconut milk
- ½ cup sugar (adjust according to preference)
- 2 ripe mangoes, peeled and cubed
- 4 cups water
- Pinch of salt
Instructions
- Rinse the sago pearls under cold water to remove excess starch.
- Bring 4 cups of water to a gentle boil, add the rinsed sago pearls, and lower the heat. Stir frequently until the pearls turn translucent (15-20 minutes). Drain and set aside.
- In another pot, combine coconut milk, sugar, and a pinch of salt. Heat gently, stirring to dissolve the sugar.
- Once sweetened to your liking, fold in the cooked sago pearls and simmer on low for 5 minutes.
- Prepare the mango by peeling and chopping it into small cubes.
- Layer the coconut sago mixture in cups or bowls, top with diced mango, and garnish with mint or toasted coconut flakes if desired.
- Chill for at least an hour before serving.
Notes
This dessert is best served chilled. Adjust sweetness based on the ripeness of mangoes.
