Ingredients

  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line an 8-inch round springform pan with parchment paper.
  3. In a large mixing bowl, combine the cream cheese and sugar, beating until smooth. Gradually add eggs, mixing thoroughly before stirring in heavy cream, vanilla, and salt.
  4. Pour the mixture into the prepared pan and smooth the top.
  5. Bake for 45-50 minutes, or until the top is deeply caramelized and cracks form.
  6. Allow to cool for 30 minutes at room temperature, then refrigerate for at least 4 hours before serving.

Notes

For a deeper caramel flavor, increase baking time slightly. The cheesecake can also be paired with fresh whipped cream or berry coulis.
